When I was little, my Oma had these ginger thin cookies that were amazing! They were my introduction to ginger cookies. Then, my friend made gingerbread when she was living here and I was hooked! I plan on making gingerbread every December from now one because it is just so good! A few notes - I generally don't have buttermilk on hand, so I make a substitute with lemon juice and milk. The first year I made gingerbread, I didn't have any molasses, so I substituted that as well with brown sugar. I used butter instead of shortening that first year, and with all that substituting, they turned out fine. Actually quite good! Also, it says "ungreased pan" but I grease mine anyway because I've had too many issues over the years with things sticking. -Ingredients- •1 cup sugar •1 cup shortening •1(1/2) tsp salt •2 tsp baking soda •1 tsp baking powder •3 tsp ginger •2 tsp cinnamon •1 tsp allspice •(2/3) cup buttermilk (2 tsp lemon juice & 2/3 cup milk for substitute) •1 cup molasses -Instructions- •combine above ingredients on low for one minute •add 4-5 cups of flour, one cup at a time •refrigerate dough for at least one hour •bake on an ungreased pan at 375 degrees for 8-10 minutes I use a Royal Icing recipe for the frosting. It hardens and stays in place well. At first, it can spread a bit as you're putting the icing on, but it quickly starts to firm. I've used a knife and a baggie with a hole cut in the end and I recommend the knife. It's a bit slower of a process but you have more control and the icing doesn't "run away from you" all over the cookies.
